Daisy May's Story

WHY WE STARTED DAISY MAY’S COTTAGE COOKING.

Nick has always loved cooking.  At age 17, after being a bar-back at a pub on the south coast of England (where he grew up), he got thrown into being the cook. Literally. The chef hurt his back, and Nick was up to bat. He eventually became the main cook since the chef never returned due to his injury.  (Side note: Ask him about the time he cooked salmon for Eric Clapton.)

Luckily, Nick was taught the art of cooking by his mother and both grandmothers and was up for the challenge.  His paternal family also owned a bakery in the small village of Wilton in England, so I guess you could say it’s in his blood to be amazing in the culinary arts.

In the early 2000s, he emigrated to Utah and still pursued his love for food by cooking for his large family. He also used his creativity and passion by cooking privately in homes across the Wasatch Front, picking up skills and becoming more creative with food as time passed.

But where was all this going? 

When he met me, I wanted him to continue pursuing his love of cooking so other people could enjoy his delicious food rather than just the two of us.  (And it is YUMMY, believe me.) 

So, in November 2020, we looked into a food truck - we pumped the brakes and took a left turn because of the HUGE investment.  Shout out to all the food truck owners because y ’all’s job is HARD. 

We landed at ComCom Kitchen in Salt Lake City and started - not knowing what we were doing. We want to thank my friend, Gus, for showing us the ropes with marketing and getting customers in the door. We probably would still be eating sausage rolls and steak pies alone if he hadn’t helped us out.  

So why the name Daisy May’s Cottage Cooking?

Well, it’s named after our daughter, who miscarried.  She was a little miracle as I had never conceived until her.  Yes, it was really heartbreaking that she didn’t live more than 12 weeks, but in her honor, we created this food business to share our love (Nick’s for cooking, mine for eating - ha) with the public.  It is our love for her that we do this.
